Black Bean Sauce Chicken

Black Bean Sauce Chicken

Ingredients
1/2 chicken, cut into pieces
50g fermented black beans, soaked & chopped
2 tbsp chopped garlic
2 tbsp chopped shallot
2 tbsp chopped ginger
2 fresh red chilies,chopped
2 onions, cut into wedges
1 fresh red chili, cut into pieces
2 stalks spring onion, sectioned

Seasoning
1 tbsp oyster sauce
2 tbsp light soya sauce
1/2 tbsp sugar
200ml water

Method :
1.) Deep-fry chicken for a short while. Dish and drain.
2.) Leave 3 tbsp oil in the wok, saute garlic, shallot and ginger until fragrant.
3.) Add in fermented black beans and stir-fry until aromatic.
4.) Add in seasoning and chopped fresh red chili.
5.) Stir well and cook at lower heat for 2 minutes.
6.) Add in fried chicken and onion, simmer until the sauce has thickened.
7.) Add in spring onion and fresh red chili. Stir well.
8.) Dish up and serve.

Tomyam Fried Chicken


Tomyam Fried Chicken

Ingredients
1 chicken, cut into pieces
2 tbsp chopped kafir lime leave
3 stalk lemongrass, chopped
1 tbsp chopped shallot
100g tomyam paste
1/4 tsp salt
1 tsp sugar
3 tbsp plain flour
1 1/2 tbsp corn flour
1 egg

Method :
1.) Mix all ingredients and marinate for 2 hours.
2.) Heat up oil, deep fry until golden brown.
3.) Drain and dish up.
4.) Serve.

Fried Ginger Chicken With D.O.M


Fried Ginger Chicken With D.O.M

Ingerdients
600g chicken, cut into pieces
30g shredded ginger
2 tbsp chopped garlic
1 stalk spring onion, cut into 1" length
1/2 chili, shredded for decoration
cooking oil
3 tbsp D.O.M liquor

Seasoning
1 tbsp oyster sauce
2 tbsp light soya sauce
1/4 tsp salt
1/2 tsp sugar
6 tbsp water

Method :
1.) Heat up oil, saute chopped garlic and shredded ginger until fragrant.
2.) Add in chicken and stir well.
3.) Add in seasoning and stir-fry with medium heat until chicken cooked.
4.) Add in spring onion and stir well.
5.) Switch off the heat, add in D.O.M liquor and stir well.
6.) Dish up and put shredded chilies on top. Serve.

Steamed Chicken With Mushroom


Steamed Chicken With Mushroom

Ingredients
1/2 chicken, cut into pieces
12 mushrooms, soaked, cut into half
1 tbsp shredded spring onion
1/2 tbsp Shredded fresh chili
1/2 tbsp shredded ginger
1/2 tbsp garlic oil (optional)

Marinade
3 tsp corn flour
3 tbsp light soya sauce
1/2 tsp sugar

Method :
1.) Marinade chicken with 2 tsp corn flour & 2 tbsp light soya sauce about 15 minutes.
2.) Marinade mushroom with 1/2 tsp sugar, 1 tsp corn flour & 1 tbsp light soya sauce about 15 minutes.
3.) Arrange the mushrooms in the steaming plate.
4.) Continue arrange the chicken & shredded ginger on top.
5.) Make sure the water in the wok is boling.
6.) Then steam the chicken at medium heat for 20 minutes or until chicken cooked.
7.) Put spring onion and fresh chili on top.
8.) Remove from heat and serve.

Remarks : When chicken is cooked then put garlic oil. (optional)

Steamed Chicken with Herbal

Steamed Chicken with Herbal

Ingredients
1/2 chicken
10 red dates chopped
4 slices tong kwai chopped
2 tbsp kei chee chopped
1 1/2 tsp salt.

Method :
1.) Seasoning chicken with salt about half hour.
2.) Pre-mix chopped red dates, tong kwai & kei chee.
3.) Apply the herbal on the whole half chicken.
4.) Ensure the water in the wok is boiling and ready to
steam the chicken with medium heat for 20 minutes.
5.) Remove from wok, take chicken out from the steaming plate
and cut into pieces.
6.) Arrange chicken to the plate and pour the herbal gravy
on the chicken and serve.


Tips : Steam 1 whole chicken is more delicious than half chicken.

Steamed Salted Chicken


Steamed Salted Chicken

Ingredients
1/2 Chicken
1 tbsp Salt
Some shredded spring onion, for decoration

Methods :
1.) Seasoning the chicken with salt for minimum half hour.
2.) Make sure the water in the wok is boiling.
3.) Then steam the chicken at medium heat for 20 minutes.
4.) Remove from wok and cut the chicken into pieces.
5.) Put some shredded spring onion on top and serve.

Tips : This Steamed Salted Chicken can serve with the thai chilies sauce.
